February Menu Specials

Dijon-Herb Crusted Salmon

Creamy Dijon mustard and fresh herb crusted filet of roasted salmon.  Served with lemon roasted asparagus and toasted barley rice pilaf.

Layered Chicken and Black Bean Enchiladas

Shredded chicken, black beans, tomatoes, peppers and cheese layered with a mildly spiced red sauce and crispy corn tortillas.  Served with Spanish style seasoned rice. 

December Menu Specials

Roasted Pork Tenderloin with Pomegranate & Fennel Salsa

Spice rubbed pork tenderloin oven roasted until tender and topped with a refreshing pomegranate and fennel salsa.  Served with bulgar wheat pilaf and sautéed green beans.

Butternut Squash & Chorizo Enchiladas

Flour tortillas filled with a mixture of mashed butternut squash and crumbled chorizo.  Topped with traditional red enchilada sauce & cheese.  Served with southwest sautéed corn and black beans.

Grilled Vegetable Flatbread with White Bean Soup

Grilled Portobello mushrooms, zucchini and cheese flatbread baked in the oven by you for a super fresh and tasty dinner.  Served with a pureed white bean soup.

Thai Chicken Satay with Spring Roll Salad
Grilled marinated chicken breast with peanut dipping sauce.  Served with jasmine rice and a spring roll salad of thinly sliced cabbage, green onion, and ginger lightly seasoned with soy sauce and rice vinegar.  
Maple Roasted Salmon with Lentils
Maple roasted salmon filets served atop a saute of lentils and vegetables.  With sage roasted butternut squash and potatoes.
Classic Stuffed Shells
A great stand-by for drop in guests, Chef Erica’s secret family recipe: Large pasta shells filled with herb ricotta cheese and topped with homemade two-meat sauce and cheese.

Pomegranate Glazed Salmon

Salmon filets topped with a pomegranate citrus glaze and oven roasted.  Served with pecan and cranberry studded couscous and sautéed greens. 

Spinach & Sausage Stuffed Portobello Mushrooms

Jumbo Portobello mushrooms stuffed with spinach, turkey sausage, and parmesan cheese.  Served with roasted Brussels sprouts and wild rice.

Quinoa and Apple Stuffed Acorn Squash

A true taste of fall – roasted acorn squash halves stuffed with a sweet and savory blend of quinoa, apples, vegetables, goat cheese, and fresh ginger.

Southwestern Blackened Salmon

This meal features local zucchini, peppers, and tomatoes.  Salmon filets are coated in a flavorful blend of garlic, onion, and smoked paprika and are pan roasted.  Served with corn bread and zucchini stuffed peppers and a colorful tomato salsa. 

Eggplant Rollatini

This meal features local eggplant, squash, and tomatoes.  Eggplant is sliced thin and grilled, then filled with a blend of ricotta cheese and herbs, and topped with a fresh tomato sauce.  Served with sautéed summer squash and a side of pasta.
